My New Favorite Summer Drink: A Delicious Watermelon Smoothie

 

 

I want to have my cake and eat it, too when it comes to following a clean and healthy eating plan. I want my food to taste good. I want to be excited about eating fruits and vegetables. 

If there's one thing that I'm always talking about in my healthy living community, it's about enjoying the food that we eat and using that food as medicine. 

And if there's one thing I've learned about eating healthfully, is that it's all about getting creative with simple, common foods. No, you don't need to spend hundreds of dollars every month chasing after the next miracle ingredient from some exotic superfood--your "superfood" is available locally!

What's more simple and common than watermelon? Also, for a simple fruit, it has a pretty potent micronutrient profile: lycopene, Vitamin A, B6, Vitamin C, as well as vital antioxidants and amino acids.  For months I've been seeing them everywhere, and I diligently bought one each week during my trips to the grocery store...because, you know, watermelon is the thing we buy during the summer, but we often underestimate why it's so important to consume a fruit like this daily. 

And then one day I came home from the beach, thirsty and hungry and thought, "why not throw it in my blender?" It's so simple! 

And the best part? It's sweet, filling, and versatile.

Ingredients

1 ripe watermelon, cut to fit blender.

1 lemon, quartered and pitted (try Myers lemon).

Optional: 1 handful of blueberries, strawberries, and a couple of sprigs of mint.

 

Preparation

Blend the watermelon pieces until smooth, using a tamper to evenly get all the pieces. Slowly add your blueberries, strawberries and mint leaves until smooth. Squeeze in your lemon juice, blend, and enjoy.
